The artichoke harvest begins as early as July, depending on the weather and the age of the plants, and continues until around the end of September.

Only the fully developed ones are harvested, about the size of a fist, fleshy flower buds. You must not yet reveal any petals and must, at the latest, before the sepals loosen up, for example 2 to 3 cm below the base of the flower should be cut off. Stored cool, keep harvested artichokes 3 to 4 weeks.
