Artichokes are relatively sensitive to frost and must be wintered carefully.

In October, the harvested flower stalks are cut off close to the ground and the leaves are tied together in a tuft. After that, the plants are covered with spruce brushwood and 20 piled up with soil up to 30cm high. To prevent the risk of rotting, you should avoid applying the soil directly to the plants.

It is beneficial in frost-free weather, to ventilate the plants, so that no rot occurs. The protective cover is removed so far, that the fresh air can reach the root neck. If there is a risk of frost, it must of course be covered again. At the end of March to mid-April, the artichokes should be uncovered again and all but the three strongest shoots should be removed.
