Of course you can have the swedes, that you need, harvest beforehand. However, everyone else stays in the ground for as long as possible, because they hold up better in winter. Turnips intended for winter use can be kept in heaps of earth or cool cellars. When harvesting, the beets intended for storage must not be damaged, because otherwise it will easily rot. Any soil adhering to you is carefully removed and the foliage is cut off smoothly with a sharp knife. The cutting point should not be too close to the beet head, because that also gives rise to rot.
